How do you get culinary argan oil?
We obtain Culinary Argan oil, after pressing almonds.
Traditionally in Morocco, women are responsible for making argan oil. It is a know-how that requires knowledge because the process is long and quite complicated.
First, the nuts are collected from the trees and then dried in the sun. Only nuts in perfect condition are used.
Then comes the pulping stage, which consists of methodically breaking the shell in order to access the nuclei without damaging them. We can use in this step a special machine or using two stones to break the shells, a technique that requires precision and to be delicate.
Then, this time you have to break the pits with a hammer, then a pestle to crush them. This step is basically just as difficult, if not more so, because the cores are very robust, but the dropouts contained inside are, on the contrary, very fragile. They must therefore not be any damage in them when breaking the cores. This is the crushing step.
Finally, when the almonds have been harvested, they are carefully sorted and then placed in a container, and will be roasted by fire to obtain a food argan oil. The stage of decantation and filtering arrives: the almond paste obtained is left to rest so that the oil comes out.
